"My name is Emily Eldh and I am the founder of The Muffin Drop. For many years I suffered with severe autoimmune issues, specifically related to the thyroid and nervous system. 

Early in my health journey I was shown the impact of diet on the body. In an effort to detoxify my body and heal holistically, I switched to foods that didn't contain gluten or animal products. This lead me to a minor obsession with being in the kitchen and playing with vegan, gluten-free recipes. 

One recipe I couldn't stop testing for was banana chocolate chip mini muffins. I shared these drops of yum with my family and friends until 2021 when I began sharing them with the world!
